Banana Bread

1 cup unbleached flour
2/3 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 cup sugar
1/3 cup margarine, softened
2 eggs
1 1/2 cups mashed ripe bananas (3 to 4 bananas)
1/3 cup water
1/2 cup chopped walnuts
  1. Preheat oven to 350 degrees F. Grease bottom of loaf pan, 8 1/2x4 1/2x 2 1/2 or 9x5x3.
  2. In a medium mixing bowl combine the flours, baking soda, salt, and baking powder. Set aside.
  3. Cream sugar and margarine in a large mixing bowl. Stir in eggs until blended. Add bananas and water; beat for 30 seconds. Add flour mixture and mix until just blended. Fold in walnuts. Pour into loaf pan.
  4. Bake 8-inch loaf for 1 1/4 hours, 9-inch loaf for 1 hour or until toothpick inserted in center comes out clean. Cool for 5 minutes. Loosen sides from loaf pan and remove. Cool completely before slicing.

Makes 1 loaf
