Oatmeal Cookies

1 1/4 cups margarine (2 1/2 sticks)
3/4 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
3 cups oats
1/2 - 3/4 cup raisins
  1. Preheat oven to 375 degrees F.
  2. In a medium mixing bowl combine flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl beat margarine, brown sugar, and granulated sugar until fluffy. Beat in egg and vanilla.
  4. Add combined dry ingredients to wet ingredients. Mix well.
  5. Stir in oats. Fold in raisins.
  6. Drop by heaping tablespoonfuls onto ungreased cookie sheet.
  7. Bake at 375 degrees F. for 8-9 minutes for a chewy cookie or 10-11 minutes for a crisp cookie. Cool 1 minute on cookie sheet then remove to wire rack and cool completely.

Makes about 4 1/2 dozen cookies
